Recently I was making my favorite dessert: cheesecake. I had a recipe I liked on hand, but wanted something different for the crust, than the usual crumbled graham cracker/vanilla wafer recipe. After looking over the other ingredients, I decided to try my hand at creating my own cookie 'crust' recipe... no crumbling necessary.

The resulting cookies were so delicious, I have decided to share the recipe.

Heavenly Honey Pecan Cookies

Ingredients:

  • 1 1/2 cups butter, softened
  • 2 eggs, slightly beaten
  • 2 cups granulated sugar
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 cups flour, sifted
  • 1/2 cup finely chopped pecans

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large sized bowl beat butter, eggs, sugar honey and vanilla together.
  3. Add dry ingredients and mix well.
  4. Scoop walnut-sized balls of dough onto a cookie sheet, press flat with your fingers or a glass, or roll dough into a 2" log and slice 1/4" thick. Bake 10-12 minutes.
  5. Allow to cool for 5 minutes on cookie sheet, before moving to wire rack.  They are very soft.
  6. Store in an airtight container.

Makes: 5 dozen 2 1/2" cookies

These look similar to a recipe my husband loves...but even better!

I've gotta make butter first (it's easier than getting to the store in the snowstorm we're having), then maybe I'll try these today.

Gorgeous taste and texture, only problem I had is that they seemed to get stuck to the tray much more easily than other recipes. Apart from that, wonderful!

I always bake mine on a well seasoned stoneware pan, and have never had trouble with sticking, but I can imagine it would be a problem with a metal pan.
